Ghee Making Machine

I want to make a ghee making machine for an indian friend, for which i need to rotate an ac motor clockwise and anti-clockwise repeadly for few seconds…i need to set time for rotation as well as speed of rotation…how can this be done … for speed regulation i am thinking to use fan regulator but how to change direction of rotation repeatedly after a set numbber of seconds

you can use variable frequency drive (VFD device) with any controller to control speed and direction of single-phase or three-phase AC motor….duration and direction of rotation can then be programmed on controller
