Is this ME project or DEGREE project ?
Let’s go step by step.
1. PAN detection- Weight sensor (Load Cell) is good option instead of object sensor.
2. Temperature- Use thermo couple for this. Once temperature is known, we can provide controlling and overheat detection can be done by means of programming.
3. User interface- Do you want graphical interface or only switches?
4. IGBT driver circuit control- Need to generate PWM pulses with fixed ON cycle time as my experience of working on IGBT says that it needs min ON time to work properly.
Now the main question is which controller you are planning to use ?
I have worked on similar application and I recommand to use ARM7. If you are going for GRAPHICAL USER INTERFACE go for LPC 2478.
