first you have to make running demonstration of model train.
for detecting arrival of station or a unmanned gate you need IR sensors. use DC gear motor of 5 to 10 RPM for automatic gate.

the capacitor value can be found from the design equation like for filter design
freq = 1 / 2*pi*R*C
if you have desired frequency, you just assume value of R (as 1 K, 10 K etc) and calculate value of C. thats all….
type of capacitor depends upon value of capacitor and voltage rating. it can be polarized (electrolytic) or non polarized (ciramic disc)

if there are analog sensors in your project and you need ADC then select controller with built in ADC like AVR, PIC, ARM etc
mostly GSM output is serial UART. it is supported by almost all controllers 8051, AVR, PIC, ARM etc
so list out your needs and select controller based on application requirements

you are correct. LCD is output device. reading the content of CGRAM / DDRAM is hardly used. how ever the option is given for any posibility.

there are two ways that you can vary speed of AC motor
1) Variable Frequency Variable Voltage – used in VFD – variable frequency drives
2) Phase angle control – used in domestic fan regulators
for 1st option, you can get PWM chips or controller readily available. just search for it on google.

both are ciramic disc type capacitor.
always keep in mind if no polarity shown that means its ciramic disc
another thing here both capacitors are used here as bypass capacitors.
