Julio.. I think ur ADC should not be working properly..!! Check the input voltage to the ADC and test whether the controller is getting the proper input or not..!! i mean if the reqd current and voltage levels are not syfficiently met then controller will not be able to send the data out there to LCD..!!
or otherwise check ur LCD interfacing program whether u hv initialised the LCD to its proper configurations or not..!!
